Mozzarella Orzo Salad

  • 1 cup uncooked orzo pasta
  • 1 1/2 cups cubed fresh mozzarella cheese
  • 2 fresh plum tomatoes, seeded and cut into bite-size pieces
  • 1/4 cup chopped fresh basil
  • 1 teaspoon crushed red pepper flakes
  • salt to taste
  • 1 tablespoon olive oil, or as needed

Fill a large pot with water that has been lightly seasoned with salt and bring it to a vigorous boil. Introduce the orzo into the pot and return the water to a rolling boil. Cook the pasta in the boiling water, uncovered and occasionally stirred, until it reaches an al dente texture, which is slightly resistant to the bite, approximately 10 minutes. Remove from heat and let it cool down.

In a salad bowl, combine the mozzarella cubes, fresh tomatoes, fragrant basil leaves, red pepper flakes, and a pinch of salt. Drizzle the oil over the mixture to coat it evenly. Add the cooked orzo and gently toss everything together until the pasta is well combined with the dressing.
