Mozzarella Basil Panini
Ingredients
  • 2 tablespoons olive oil, divided
  • 3/4 cup diced tomato
  • 1 tablespoon drained capers
  • 1 pinch red pepper flakes
  • 1/2 teaspoon balsamic vinegar
  • 4 slices sourdough bread
  • 1/4 cup prepared pesto
  • 1 (6 ounce) package sliced mozzarella cheese
  • sea salt and coarsely ground pepper to taste

Preheat a nonstick skillet over medium-high heat and add 1 tablespoon of oil. Introduce the ingredients - diced tomatoes, capers, and a pinch of red pepper flakes - into the skillet. Allow them to soften slightly, taking about 3 minutes to achieve this. Take the skillet off the heat and mix in some vinegar.

Prepare your bread slices by brushing one side of each with the remaining oil. Spread the other sides with a generous helping of pesto. Arrange two slices of bread, pesto side up, on a flat surface. Layer them with mozzarella cheese and then the tomato mixture you've just created. Sprinkle some salt and pepper to taste, followed by a layer of bread with the oiled side facing upwards.

Place the sandwiches in a large skillet over medium heat and toast until golden brown, taking around 5 to 7 minutes per side. To ensure even cooking, place a heavy skillet on top of the sandwiches to weigh them down as they cook.
