- 1 cup Italian salad dressing
- 1 tablespoon Italian herb seasoning
- 1 tablespoon chicken seasoning (such as Grill MatesĀ® Montreal Chicken Seasoning)
- 2 tablespoons canola oil
- 4 (1/2 inch thick) slices fresh mozzarella cheese
- 4 (1/2 inch thick) slices tomato
- 4 large fresh basil leaves
- 1 tablespoon balsamic vinegar

Combine chicken breasts, Italian salad dressing, Italian herb seasoning, and chicken seasoning in a sealed container to create a marinade. Massage the contents together several times to evenly coat the chicken with the dressing. Remove any air from the container and refrigerate for 4 to 6 hours.

Heat a large cast iron or oven-safe skillet over medium-high heat, adding canola oil to the pan. Allow the oil to reach a temperature at which it will sizzle when a small droplet of water is added. Remove the chicken breasts from their marinade and discard the used dressing. Gently place the chicken breasts into the hot oil, cooking for 2 minutes on each side.

Transfer the skillet to a preheated oven at 500 degrees F (260 degrees C). Bake until the chicken is no longer pink inside and the juices run clear, approximately 12 minutes. Place a slice of mozzarella cheese on top of each chicken breast and add a tomato slice.

Return the skillet to the oven, baking until the cheese has melted, 3 to 5 minutes. Transfer the chicken breasts to a serving platter and garnish each with a basil leaf, finishing off with a drizzle of balsamic vinegar.
