Mozzarella and Tomato Crostini
Ingredients
  • 1 French baguette, cut into diagonal 1/2 inch slices
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, halved
  • 6 plum tomatoes, seeded and chopped
  • salt and ground black pepper to taste
  • 1 bunch fresh basil, julienned
  • 1 pound fresh mozzarella cheese, sliced

Position the oven rack approximately 6 inches away from the heat source and set it to broil. Preheat the oven's broiler setting.

Lightly anoint bread slices with olive oil; arrange them on a baking sheet. Subject to the heat until toasted, around 3 minutes. Keep an eye out.

Apply a minced garlic clove to each crostini by rubbing it gently with the cut side of the clove.

Combine tomatoes in a medium-sized bowl and drizzle them with olive oil; sprinkle with salt and black pepper to taste.

Arrange the toasted bread slices on a serving tray. Place one slice of mozzarella cheese atop each crostini, followed by a spoonful of the prepared tomatoes and a few leaves of fresh basil.
