Mouthwatering Chicken Enchiladas
Ingredients
  • 1 tablespoon olive oil, or as needed
  • 4 skinless, boneless chicken breast halves
  • 1 onion, chopped
  • 1 3/4 cups shredded Cheddar cheese, divided
  • 1/2 pint sour cream
  • 1 tablespoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 1 (15 ounce) can tomato sauce
  • 1/3 cup chopped green bell pepper
  • 1 clove garlic, minced
  • 1 tablespoon chili powder
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 8 (10 inch) flour tortillas
  • 1 (12 ounce) jar taco sauce
Instructions
1
Gather all the necessary ingredients and preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
2
Heat a moderate amount of oil in a non-stick skillet over medium heat. Add the chicken and cook until it reaches an internal temperature of 165 degrees Fahrenheit, indicating that it is no longer pink and the juices run clear. Transfer the chicken to a cutting board and slice it into small cubes. Return the chicken to the skillet.
3
Add the onion, 1 cup of Cheddar cheese, a generous amount of sour cream, some chopped parsley, dried oregano, and black pepper to the skillet. Cook over low heat, stirring constantly, until the cheese has melted and the mixture is well combined.
4
Add a can of tomato sauce, diced green pepper, minced garlic, chili powder, and salt to the skillet. If the mixture seems too thick, add a small amount of water to achieve the desired consistency.
5
Spoon the chicken mixture into tortillas and roll them up tightly, forming enchiladas. Arrange the enchiladas seam-side down in a 9x13-inch baking dish.
6
Top the enchiladas with taco sauce and sprinkle the remaining 3/4 cup of Cheddar cheese over them.
7
Bake the enchiladas in the preheated oven, uncovered, for about 20 minutes or until the cheese has melted and bubbled. Let them cool slightly before serving.
8
Serve the enchiladas hot, garnished with additional parsley or oregano if desired.
