  • 4 cloves garlic, sliced
  • 1 1/2 teaspoons ground cumin
  • 1 (14 ounce) can diced tomatoes
  • 1 pinch cayenne pepper, or to taste
  • sea salt and ground black pepper to taste
  • 1/2 teaspoon honey
  • 4 large eggs
  • 3 tablespoons roughly chopped fresh cilantro

Preheat a small cast iron skillet over medium heat by warming olive oil within it. Introduce scallions to the pan and cook until they become tender, taking around 3 to 5 minutes. Incorporate garlic and cumin into the mixture for added flavor.

Add diced tomatoes, a pinch of heat from cayenne, and season with salt and pepper to taste. Sample the mixture and adjust sweetness by adding a drizzle of honey if required. Allow the ingredients to meld together, bringing the mixture to a gentle simmer and cooking until it thickens slightly, approximately 15 minutes.

Create a well in each quarter of the skillet and gently place an egg into it. Use a fork to spread the egg whites evenly across the surface, ensuring they cover the entire area. Continue cooking until the eggs reach your desired level of doneness, still retaining a soft center but no longer runny, around 5 minutes or to your liking.
