Moroccan Pepper and Tomato Salad
Ingredients
  • 2 green bell peppers
  • 3 tablespoons olive oil
  • 4 fresh tomatoes, peeled and chopped
  • 2 teaspoons sugar
  • 1 1/2 teaspoons paprika
  • 1 teaspoon fresh parsley
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • ground black pepper to taste
  • 1 (2.25 ounce) can sliced green olives

Preheat the oven's broiler setting to its highest temperature.

Take the green bell peppers and position them on a baking sheet, then subject them to the broiler's heat, rotating the peppers every minute or so for 5 minutes, or until they are tender and have developed a caramelized appearance on all sides.

Once the peppers have finished cooking, remove them from the heat source and proceed to peel and chop them.

In a skillet, warm the olive oil over medium heat, then combine it with the peppers and tomatoes. Introduce a small amount of sugar into the mixture, stirring constantly.
