Moroccan Chicken with Caramelized Pears
Ingredients
  • 7 tablespoons olive oil, divided
  • 2 onions, peeled and sliced
  • 1 whole chicken, cut into pieces
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 3 cinnamon sticks
  • 2 bay leaves, crushed
  • 1 bunch fresh cilantro, chopped
  • 2 tablespoons fresh ginger root, peeled and minced
  • 1/2 cup water
  • 2 tablespoons butter
  • 2 pears, cored and sliced
  • 2 tablespoons honey

Preheat your oven to the desired temperature of 350 degrees Fahrenheit or 175 degrees Celsius.

In a skillet, heat a moderate amount of olive oil over medium heat. Introduce sliced onions into the skillet and stir them constantly until they have softened, turned golden brown, and developed a rich aroma, taking approximately 8 to 10 minutes.

Transfer the cooked onions into a traditional Moroccan cooking vessel, known as a tagine pot. Arrange chicken pieces on top of the onions in an orderly fashion.

In a small bowl, blend together turmeric, cumin, ground coriander, and salt to create a harmonious spice blend. Combine the spice mixture with the remaining 5 tablespoons of olive oil and mix until well combined.

Apply the spice mixture evenly to the chicken pieces, followed by a sprinkling of cinnamon, bay leaves, ginger, and cilantro. Add 1/2 cup of water to the tagine pot and cover it with a lid to trap the flavors.

Bake the chicken in the preheated oven until it has lost its pink color at the bone and the juices run clear, taking around 50 minutes. To verify the chicken's doneness, insert an instant-read thermometer near the bone and check if it reaches 165 degrees Fahrenheit or 74 degrees Celsius.

While the chicken is cooking, melt butter in a separate skillet over low heat. Introduce sliced pears into the skillet and cook them, stirring occasionally, until they have caramelized and developed a sweet aroma.

Remove the tagine from the oven and stir in the cooked pears. Return it to the oven for an additional 10 minutes, allowing the flavors to meld together.
