  • 2 tablespoons lime juice
  • 2 tablespoons cilantro, chopped

Preheat a large saucepan over medium heat, filling it with peanut oil. Introduce the chopped onion into the pan and cook until it becomes soft and transparent, taking approximately 3 to 5 minutes. Add the sliced red bell pepper and continue cooking for an additional 3 to 5 minutes, until it reaches a tender state. Add the curry paste and cook for just one minute. Pour in the coconut milk, gradually bringing it to a gentle boil.
