Ingredients
- cooking spray
- 1 tablespoon olive oil
- 1 green bell pepper, diced
- 1/2 cup diced sweet onion
- 1/2 teaspoon minced garlic
- 1 pound extra-lean (95%) ground beef
- 1 cup whole wheat bread crumbs
- 3/4 cup shredded carrot
- 3/4 cup shredded zucchini
- 2 large eggs
- salt and ground black pepper to taste
- 1/4 cup ketchup, or to taste
Instructions
1
Acquire all necessary components for the dish.
2
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
3
Spray a 9x5-inch loaf pan with cooking spray to prevent sticking.
4
Heat olive oil in a large skillet over medium heat;
5
cook and stir sliced bell pepper and onion in hot oil until the onion becomes translucent and the bell pepper softens, taking around 5 to 10 minutes.
6
Add minced garlic and cook until fragrant, approximately 1 to 2 minutes.
7
Take the skillet off the heat.
8
Combine ground beef, breadcrumbs, grated carrot, sliced zucchini, eggs, salt, and pepper in a large bowl;
9
mix the ingredients thoroughly using your hands.
10
Press the mixture into the prepared loaf pan.
11
Bake in the preheated oven until it reaches an internal temperature of at least 160 degrees Fahrenheit (70 degrees Celsius), indicating that the center is no longer pink and has reached a safe minimum internal temperature of 35 to 40 minutes.
12
Spread ketchup over the meatloaf and continue baking until it starts bubbling, taking about 5 minutes more.
