Ingredients
- 1 cup dry navy beans
- 3 cups water
- 1 large meaty smoked ham bone
- 6 tablespoons chopped fresh parsley
- 3 tablespoons dried minced onion flakes
- 1 tablespoon minced fresh garlic
- 2 whole bay leaves
- 1/2 teaspoon dried thyme leaves
- 1/2 teaspoon dry mustard powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1 (28 ounce) can tomato puree
- 1 cup sliced celery
- 1/2 cup ketchup
- 3 tablespoons chicken soup base
- 3 tablespoons molasses
- 1 tablespoon olive oil
- 1 tablespoon brown sugar
- 1/4 teaspoon cracked black pepper, or to taste
- 1/2 cup uncooked small shell pasta
Instructions
1
Begin by placing dry beans into a saucepan and filling it with water, leaving about an inch at the top.
2
Bring the mixture to a rolling boil, then take it off the heat and cover the saucepan with a lid.
3
Allow the beans to soak in their liquid for 1 hour, after which you can drain and rinse them.
4
Next, pour in 3 cups of fresh water into a large pressure cooker.
5
Add the drained beans and ham bone to the pressure cooker, along with some chopped parsley, onion flakes, minced garlic, a few bay leaves, thyme sprigs, dry mustard powder, chili powder, and paprika.
6
Seal the pressure cooker and heat it up to 15 pounds per square inch.
7
Cook the mixture under pressure for 7 minutes, and then add an extra minute for every 1,000 feet above sea level.
8
Take the pressure cooker off the heat and let it cool down naturally.
9
Once the pressure has subsided, open the lid of the pressure cooker.
10
Add 5 cups of water to the mixture, along with some tomato purée, chopped celery, ketchup, chicken soup base, molasses, olive oil, brown sugar, and cracked black pepper.
11
Bring the mixture to a boil again, then reduce the heat to low and let it simmer.
12
Add some shell pasta to the mixture and continue to simmer until the beans are tender, which should take about 45 minutes.
13
Finally, add more shell pasta to the mixture and let it simmer for another 15 minutes, or until the pasta is tender.
