Molasses Shoofly Pie
Ingredients
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 2 tablespoons shortening
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 1/2 cup dark corn syrup
  • 1/2 cup molasses
  • 1/4 teaspoon salt
  • 1 egg
  • 1 (9 inch) unbaked pie crust
Instructions
1
To prepare the crumb mixture, combine flour, brown sugar, and shortening in a medium-sized bowl. Use a pastry cutter or your fingers to blend the ingredients until they form a fine, crumbly texture. Set the mixture aside for later use.
2
Next, preheat your oven to 375 degrees Fahrenheit (or 190 degrees Celsius). This will ensure that the oven is at the correct temperature for baking.
3
To create the filling, combine boiling water and baking soda in a separate medium-sized bowl. Stir well to dissolve the baking soda, then add corn syrup, molasses, salt, and egg. Make sure to mix everything thoroughly before proceeding.
4
Pour one-third of the filling mixture into the unbaked pie crust, followed by one-third of the crumb mixture. Continue alternating between adding the filling and crumb mixtures until all the ingredients have been used up.
5
Finally, bake the pie in the preheated oven for 10 minutes. After this initial baking time, reduce the oven temperature to 350 degrees Fahrenheit (or 175 degrees Celsius) and continue baking for an additional 30 minutes.
