Molasses Beef Curry
Ingredients
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 dash ground black pepper
  • 1 pound cubed beef stew meat
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cups beef stock
  • 2 bay leaves
  • 2 tablespoons curry powder
  • 2 carrots, diced
  • 1/4 cup rice vinegar
  • 1 tablespoon molasses
  • 3 potatoes, cut into 1/4 inch cubes

Combine the dry ingredients, including flour, salt, and pepper, in a mixing container. Next, add the beef to this mixture and thoroughly coat it with the dry ingredients by gently tossing them together. Remove any excess dry ingredients from the surface of the beef.

Heat a generous amount of olive oil in a large cooking vessel over medium-high heat. Once the oil is hot, add the onions and beef to it, stirring constantly until they are nicely browned on all sides. Introduce the beef stock, bay leaves, and curry powder into the mixture, stirring well to combine. Bring the entire mixture to a rolling boil before gradually reducing the heat and allowing it to simmer for 30 minutes.

Add the carrots, rice vinegar, molasses, and potatoes to the mixture. Continue to simmer for an additional hour, or until all the ingredients are tender and fully cooked.
