Ingredients
- 1/4 cup vegetable oil
- 2 tablespoons cider vinegar
- 2 tablespoons water
- 1 (1.06 ounce) package mojito lime marinade mix
- 2 pounds raw jumbo shrimp, shelled and deveined
- 1 serving cooking spray
- 1 large onion, sliced into 1/2-inch rings
- 2 yellow bell peppers, quartered
- 2 red bell peppers, quartered
- 1 (8 ounce) package fajita-size flour tortillas

Combine oil, vinegar, water, and marinade solution in a large container. Introduce shrimp into the mixture and allow it to infuse for 30 minutes.

Preheat the grill to a high temperature of 300 degrees Fahrenheit (150 degrees Celsius) and coat the surface with cooking spray.

Add sliced onions to the scorching grill, preserving their ring shape. Introduce bell peppers alongside. Grill for 3 to 5 minutes on each side, before transferring them to a cutting board and roughly chopping.

Grill the shrimp until they turn opaque and are cooked through, 1 to 2 minutes on each side. Transfer the shrimp to a bowl covered with aluminum foil to maintain their warmth.

Heat tortillas on the scorching grill for 1 to 2 minutes. Assemble fajitas with chopped onion, peppers, and approximately 3 to 4 shrimp per tortilla.
