Then, in a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and a pinch of salt until well combined. In another large mixing bowl, use an electric mixer to cream together 1 cup of brown sugar and 1/2 cup of softened butter until smooth.

Add 2 large eggs and 2-3 mashed ripe bananas to the bowl with the sugar and butter mixture, beating until well incorporated. Gradually stir this banana-butter mixture into the flour mixture until just combined, taking care not to overmix.
