- 2 tablespoons sesame seeds, or more to taste

Preheat your cooking surface by heating a generous amount of sesame oil over an intermediate temperature; cook and constantly stir sliced eggplant and orange bell pepper until they become tender, approximately 8 to 10 minutes.

Combine the ingredients of a savory sauce in a container by whisking together miso paste, soy sauce, grated ginger, vinegar, water, and minced garlic until the mixture is smooth and well blended; then add it to the cooked eggplant mixture. Continue to cook and stir the combined ingredients until the sauce has thickened, achieving a rich and glossy consistency, roughly 3 to 4 minutes.
