Combine vinegar, miso paste, garlic, brown sugar, and cayenne pepper in a small bowl to create a marinade. Blend the ingredients until they form a smooth paste.

Apply the marinade liberally to both sides of the skirt steaks, making sure to cover every surface. Sprinkle a generous amount of black pepper over the meat to add flavor and texture.

Allow the steaks to sit at room temperature for approximately 30 minutes, which will help them cook more evenly.
