- 2 tablespoons sake
- 1 tablespoon brown sugar
- 2 (7 ounce) black cod fillets

Collect all necessary components for the recipe.

Position an oven rack approximately 6 inches away from the heat source and set the oven's broiler to the desired temperature. Cover a baking sheet with aluminum foil and lightly coat it with cooking spray.

Combine miso paste, water, mirin, sake, and brown sugar in a small skillet over medium heat, stirring constantly until the mixture reaches a simmering state and thickens slightly, taking around 1 to 3 minutes. Remove the skillet from heat and allow it to cool down completely, taking around 3 to 5 minutes.

Arrange cod fillets on the prepared baking sheet. Coat the fish evenly with the cooled miso mixture, making sure it's well-marinated at room temperature for 15 to 20 minutes.

Place the cod fillets under the broiler in the preheated oven for an initial 5 minutes. Rotate the baking sheet by 180 degrees and continue broiling until the fish flakes easily with a fork, approximately another 5 minutes. Remove any pin bones before serving.
