Ingredients
- cooking spray
- 1/4 cup miso
- 2 tablespoons rice wine
- 2 tablespoons mirin (Japanese sweet rice wine)
- 1 1/2 pounds halibut fillets, bones removed
- 1 tablespoon sesame seeds

Position the oven rack approximately four inches away from the heat source and set the broiler to its highest temperature. Cover a baking sheet with aluminum foil and lightly spray it with cooking spray for easy cleanup.

Combine the miso paste, rice wine, and mirin in a small bowl and whisk until they form a smooth, uniform mixture.

Place the halibut fillets on the prepared baking sheet and spoon half of the miso mixture over them.

Place the halibut under the broiler for 4-5 minutes, or until it reaches a golden brown color. Flip the fish over and brush the remaining miso mixture onto both sides before continuing to broil for an additional 3-4 minutes, or until the second side is also golden brown and crispy. Sprinkle sesame seeds over the top of the fish for added flavor and texture.
