  • 2/3 cup vegetable oil
  • 1/4 cup water
  • 2 large eggs
  • 1 (4.6 ounce) package creme de menthe thins (such as AndesĀ®)
  • 1 (12 ounce) bag semisweet chocolate chips
  • 1 tablespoon coconut oil
  • green and while candy sprinkles (optional)

Begin by preheating your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. Next, take a glass 9x13-inch pan and spray it with cooking spray to prevent sticking.

To make the brownies, combine the contents of a box mix with oil, water, and eggs in a large bowl. Using a spoon, stir the mixture 50 times to ensure it's well combined.

Pour the brownie mix into the prepared pan and bake in the preheated oven until a toothpick inserted into the center comes out clean, typically taking 28 to 31 minutes.

Once done baking, remove the brownies from the oven and let them cool slightly for about 10 minutes.

To make the mint brownie bites, break up the warm brownies into a large bowl. Then, roughly chop some mint candies and add them to the bowl.

Mix the brownies with the chopped mint until well combined, allowing the chocolate in the brownies to slightly melt.

Form the mixture into 1 1/2-inch balls by pressing them firmly together. Place these balls in the refrigerator to chill for 20 minutes.
