  • 1/4 cup chopped green bell pepper
  • 2 tablespoons chopped red onion
  • 6 eggs
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 cup shredded Cheddar cheese

Firstly, preheat your oven to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius). Next, spray twelve muffin cups with a non-stick cooking spray to prevent sticking.

At the same time, heat some olive oil in a medium-sized frying pan over a moderate heat setting. Add the asparagus, green bell pepper, and onion to the pan; cook and stir constantly until the vegetables are tender, taking anywhere from 5 to 10 minutes.

While the vegetables are cooking, whisk eggs, milk, salt, and black pepper together in a bowl. Once the vegetables are done, stir them into the egg mixture along with some Cheddar cheese; then spoon approximately one-quarter cup of the mixture into each muffin cup.
