Ingredients
- 2 eggs
- 2 egg yolks
- 1 cup sugar
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 cup milk
- 5 tablespoons butter, melted
- 2 cups Frosting for Petits Fours
Instructions
1
Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. Next, take a 10x15 inch jellyroll pan and lightly coat it with butter or cooking spray to prevent sticking.
2
In a large mixing bowl, whisk together the eggs and egg yolks using an electric mixer until well combined. Gradually add sugar to the mixture, continuing to beat until it becomes thick and pale in color, approximately 10 minutes. If you have a stand mixer, switch to the whisk attachment for added efficiency.
3
Sift the flour and baking powder into a separate bowl, then gently fold them into the egg mixture using a spatula. Add milk to the mixture and stir until just combined, taking care not to overmix. Finally, fold in melted butter until the batter is smooth and even.
4
Pour the prepared batter into the greased jellyroll pan, spreading it evenly to cover the entire surface.
5
Place the cake in a preheated oven at 350 degrees Fahrenheit for 12 to 15 minutes, or until a toothpick inserted into the center comes out clean.
6
Once the cake is done, carefully remove it from the oven and invert it onto a sheet of waxed paper. Allow it to cool completely before cutting into small squares, rectangles, or triangles.
7
Arrange the cooled cake pieces in rows on a wire rack or glazing screen, leaving plenty of space between each piece.
8
Place the rack over a shallow pan or waxed paper to catch any drips that may occur.
9
Spoon or pour warmed petit four icing over the small cakes, scraping off any excess from the pan or paper as needed. Allow the icing to set until completely dry.
10
Lift the cakes from the rack using a metal spatula and trim the bottom edges with a sharp knife.
11
Place each cake into small muffin papers for easy handling and decoration as desired.
