  • 2 eggs, beaten
  • 1/2 cup white sugar
  • 24 chocolate sandwich cookies (such as Oreo®)

Position the oven rack in the central level of the oven and heat it to 350 degrees F (175 degrees C). Prepare 24 mini-muffin cups by inserting miniature paper inserts.

Combine cream cheese, eggs, and sugar in a mixing bowl until you achieve a smooth consistency.

Place one cookie at the bottom of each paper liner. Fill the liners with a mixture of cream cheese, eggs, and sugar.

Bake in the preheated oven for 15 minutes or until the center is nearly set.

Transfer the tins to a wire rack and allow them to cool slightly before refrigerating until the cheesecake layer has set firmly, approximately 3 hours.
