Ingredients
- cooking spray
- 2 cups all-purpose flour
- 1/2 cup white sugar
- 2 tablespoons brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 1/4 cups milk
- 1/3 cup vegetable oil
- 2 teaspoons vanilla extract
- 3/4 cup mini chocolate chips
Instructions
1
Preheat your oven to 400 degrees Fahrenheit, or 200 degrees Celsius. Next, lightly mist the interior of 48 miniature muffin cups with a fine layer of cooking spray.
2
In a spacious mixing bowl, combine the flour, white sugar, brown sugar, baking powder, and salt in a harmonious blend.
3
In a separate, smaller bowl, gently whisk an egg until it's lightly beaten. Then, in this same bowl, whisk together the milk, vegetable oil, and vanilla extract until well combined.
4
Mix the egg mixture into the flour mixture until they're fully incorporated and blended together seamlessly.
5
Add mini chocolate chips to the mixture, allowing them to distribute evenly throughout.
6
Spoon a generous amount of the batter into each prepared muffin cup, filling it 3/4 full.
7
Place the muffin cups in a preheated oven and bake until the tops spring back when you lightly press them, approximately 10 minutes.
8
Once baked, briefly let the muffins cool in their tin before transferring them to a wire rack to continue cooling completely.
