- 4 Granny Smith apples - peeled, cored and finely diced
- 2 1/2 cups dried currants
- 2 1/2 cups raisins
- 1 (16 ounce) jar sour cherry preserves
- 1 1/3 cups white sugar
- 1/2 pound chopped candied mixed fruit peel
- 1/2 cup butter
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 (16 ounce) can pitted sour cherries, drained with liquid reserved
- 1 recipe pastry for a 9 inch double crust pie
- 2 tablespoons heavy cream

Combine steak and apple cider in a Dutch oven. Heat it up to a rolling boil, then decrease the heat to a gentle simmer. Cover and cook until the steak is tenderly cooked through, taking around 20 minutes to achieve this. Remove the steak from the pot and transfer it to a cutting board, where you can roughly chop it before returning it to the pot.

Next, add sliced apples, currants, raisins, cherry preserves, 1 3/4 cups of granulated sugar, mixed fruit peel, and melted butter to the pot. Add a blend of warming spices including ginger, cloves, nutmeg, cinnamon, and salt to the mixture. Continue to cook the filling over low heat, uncovered, until it reaches a thick and syrupy consistency after about 1 hour and 30 minutes of simmering.

Stir in some fresh cherries before removing the pot from the heat source.

Transfer the filling to a container and let it cool down at room temperature before covering it tightly with plastic wrap. Refrigerate the mixture for at least 1 week to allow the flavors to meld together before using it.

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a 9-inch pie dish with one of the pastry crusts. Spoon the filling into the crust, followed by covering it with the second pastry crust. Crimp the edges of the pie crust and cut a few slits into the top crust to allow steam to escape. Brush the top crust with cream and sprinkle it with 1 teaspoon of sugar.

Bake the pie in the preheated oven until it's golden brown, taking around 45 minutes to achieve this.
