Mince Pie with Crumbly Topping
Ingredients
  • 1/2 cup cold butter
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup cold water
  • 1 1/2 cups raisins
  • 5 apples - peeled, cored and chopped
  • 2 tablespoons finely chopped grapefruit peel without white layer
  • 1/3 cup orange juice
  • 1/2 cup apple cider
  • 3/4 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 graham cracker, crushed
  • 1/3 cup white sugar
  • 3/4 cup all-purpose flour
  • 6 tablespoons butter
  • 1/2 graham cracker, crushed
Instructions
1
Preheat your oven to a high temperature of 425 degrees F (220 degrees C).
2
Mix together 1/2 cup of chilled butter with 1 1/2 cups of flour and a pinch of salt in a bowl using a fork until you achieve a crumbly texture. Gradually add water, tablespoon by tablespoon, just until the mixture forms a cohesive mass.
3
Turn the dough out onto a lightly floured surface and knead it gently into a round shape. Roll it out into a 10-inch circle using a rolling motion.
4
Carefully invert a 9-inch pie dish onto the dough and flip it over to create the crust. Gently peel the pastry cloth away from the crust, making any necessary adjustments to fit it perfectly into the pie dish.
5
Fold the excess dough over the edge of the pie dish to form a crust, and set it aside.
6
In a saucepan, combine 1/2 cup of raisins, 1-2 apples, some grapefruit peel, orange juice, and apple cider. Heat over medium heat until the apples soften, stirring occasionally.
7
Add 3/4 cup of sugar, a pinch of cinnamon, some cloves, and half a crushed graham cracker to the saucepan mixture. Stir well.
8
Mix together 1/3 cup of sugar, 3/4 cup of flour, 6 tablespoons of butter, and a pinch of crushed graham cracker in a bowl until you get fine crumbs.
9
Fill the prepared pie crust with the mince filling and sprinkle evenly with the streusel topping.
10
Bake in the preheated oven for 15 minutes, then reduce the temperature to 350 degrees F (175 degrees C); bake until the topping is lightly browned, about 30 more minutes.
11
Allow the pie to cool before serving.
