Ingredients
- 1 (10.5 ounce) can cream of chicken soup
- 1 cup cottage cheese
- 1/2 cup sour cream
- 4 ounces cream cheese, at room temperature
- 1 1/2 teaspoons Creole seasoning
- 1/2 teaspoon onion powder
- 1 teaspoon garlic powder, divided
- 5 cups shredded rotisserie chicken
- 1 tablespoon chopped fresh parsley
- 30 buttery round crackers (such as RitzĀ®), crushed
- 4 tablespoons unsalted butter, melted
- 1 cup shredded mozzarella cheese
- 1 teaspoon sliced scallions, or to taste
Instructions
1
Firstly, set the oven to its highest temperature setting, which is 350 degrees Fahrenheit or 175 degrees Celsius.
2
Then, combine the contents of a can of chicken soup with cottage cheese, sour cream, softened cream cheese, Creole seasoning, onion powder, and half a teaspoon of garlic powder in a medium-sized bowl. Mix everything together until it's perfectly smooth and well combined.
3
Next, gently fold in some cooked chicken and chopped parsley into the mixture until it's evenly coated.
4
After that, mix together crushed crackers, melted butter, and the remaining half a teaspoon of garlic powder in another medium-sized bowl.
5
Now, carefully spoon the chicken mixture into an 11x7-inch or 9-inch square baking dish. Sprinkle a layer of mozzarella cheese on top, followed by the cracker mixture.
6
Finally, place the baking dish onto a sheet of aluminum foil that has been lined with parchment paper. Then, bake it in the preheated oven until the crackers turn golden brown and the edges start to bubble, which should take around 35 minutes.
7
If you want to add a finishing touch, garnish the dish with some chopped scallions on top.
