Migas Tacos

  • salt and freshly ground black pepper to taste
  • 1 tablespoon butter
  • 1 (4 ounce) can Hatch chile peppers
  • 1/4 cup onions, diced
  • 6 (6 inch) corn tortillas
  • 2 (6 inch) Tortillas, ready-to-bake or -fry, corn

Combine eggs, milk, salt, and pepper in a bowl, whisking the mixture until well incorporated.

Set the egg mixture aside to prepare for cooking.

In a skillet, melt butter over medium heat. Add Hatch chiles and sliced onions to the pan.

Continue cooking until the onions are softened and have lost their rigidity, approximately 4 to 5 minutes. Add the egg mixture to the skillet and stir constantly until the eggs are fully cooked, around 3 to 4 minutes.

Divide the egg mixture among six tortillas and top each one with a crispy fried corn tortilla strip.
