Ingredients
- 1 teaspoon vegetable oil
- 1 onion, chopped
- 1 tomato, chopped
- 1 tablespoon tomato paste
- 1 teaspoon water, if needed
- 1 (15 ounce) can fava beans, drained
- 1 tablespoon water
- 1 tablespoon ground cumin
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons ground black pepper
- 1 teaspoon ground red pepper
- 2 tablespoons olive oil
- 2 tablespoons finely chopped parsley
Instructions
1
Preheat your skillet over medium heat, then add a generous amount of vegetable oil. Next, introduce the onion to the skillet and cook it for 2 minutes while stirring occasionally.
2
Once the onion has softened, add in a handful of chopped tomatoes and a spoonful of tomato paste. Allow the mixture to cook until it reaches your desired level of mushiness, approximately 4 minutes.
3
If the mixture seems too thick, add a tiny amount of water to loosen it up. This should take about 1 minute.
4
Now, pour the fava beans into the skillet and use a spoon or spatula to mash them into a smooth paste. Add an extra tablespoon of water, along with some cumin, salt, black pepper, and a pinch of ground red pepper. Stir everything together until it's well combined.
5
Continue to heat the mixture for another minute, allowing all the flavors to meld together. Remove the skillet from the heat source and let it sit for 1 minute, allowing the flavors to settle.
6
Finally, stir in a healthy dose of olive oil and a sprinkle of parsley. This should bring everything together nicely, making for a delicious and satisfying dish.
