Microwaved Mashed Cauliflower
Ingredients
  • 1 head cauliflower, cut into florets
  • 1 (4 ounce) log herbed goat cheese (chevre)
  • cracked black pepper to taste

Fill a large microwave-safe container with cauliflower florets, making sure the water level is just above the bottom of the bowl.

Cover the container with a thin layer of waxed paper or a paper towel to allow steam to escape.

Microwave on high for 4-5 minutes, or until the cauliflower is tender and easily pierced with a fork.

Remove from the microwave and drain off any excess water.

Transfer the drained cauliflower to a food processor with crumbled goat cheese, blending until you achieve a smooth and creamy consistency.
