Ingredients
- 1 cup white sugar
- 1/2 cup light corn syrup
- 1 cup salted peanuts
- 1 teaspoon butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Instructions
1
Preheat your oven to its highest temperature setting, then place a baking sheet on the middle rack. Set it aside for now.
2
In a large microwave-safe container, mix together granulated sugar and corn syrup. Place the bowl in the microwave and heat on its highest setting for 4 minutes, stirring every 2 minutes to prevent scorching. After the initial cooking time has elapsed, stir in chopped peanuts and continue heating on its highest setting for an additional 3.5 minutes. Remove the bowl from the microwave and stir in softened butter and a few drops of vanilla extract. Microwave again on its highest setting for 1.5 minutes.
3
Once the mixture has cooled slightly, stir in a small amount of baking soda until it becomes light and fluffy. Immediately pour the mixture onto the prepared baking sheet, spreading it out thinly to form a flat layer. Allow it to cool completely before breaking it into pieces and storing them in an airtight container.
