  • 2 cups sour cream
  • 12 ounces shredded queso asadero (white Mexican cheese)

Begin by coating the base of a small microwave-safe container with some of the enchilada sauce. Next, create a layer of tortilla chips on top of that sauce. Follow this by adding another layer of the enchilada sauce, followed by a dollop of sour cream. Sprinkle shredded cheese over the top layer to complete this initial arrangement. Continue building layers, alternating between sauce and sour cream, until all the ingredients have been used up, finishing with a layer of cheese on top.

Now, place this layered mixture in the microwave and heat it on high for 2 minutes, or until the cheese has melted uniformly throughout. Remove from the microwave and serve hot immediately.
