- 1/2 cup cottage cheese

- 1/3 cup raisins
- 2 tablespoons brown sugar
- 2 tablespoons chopped walnuts
- 2 tablespoons butter

Fill a large pot with water that has been lightly seasoned with salt, and place it over high heat to bring the water to a vigorous boil. As soon as the water reaches its boiling point, add the egg noodles and return it to a rolling boil. Cook the pasta under its lid, occasionally stirring it, until it reaches the desired level of doneness, but still retains a slight firmness in the center, approximately 5 minutes.

Transfer the cooked pasta to a colander positioned in the sink and drain it thoroughly.

Preheat an 8-inch square microwave-safe glass baking dish by greasing it with a small amount of oil. In a mixing bowl, whisk the eggs together until they are well combined. Add the cooked noodles, white sugar, chopped apples, sour cream, cottage cheese, cinnamon, salt, and raisins to the bowl with the eggs. Mix everything together until it is well combined.

Pour the mixture into the prepared baking dish and microwave it on a medium-high setting (70% power) for 7 minutes.

In another bowl, combine the brown sugar and chopped walnuts. Use a pastry blender or your fingers to work the butter into the mixture until it forms a crumbly topping. Sprinkle this topping over the pudding and return it to the microwave for an additional 7-9 minutes, or until the center is firm.
