- 1/4 cup freshly grated Parmesan cheese
- 1 tablespoon kosher salt

Combine honey and warm water in a large bowl, then sprinkle yeast over the surface. Allow it to sit for 5 minutes, permitting the yeast to soften and begin to bubble. Add 1 tablespoon of salt, 1 tablespoon olive oil, onions, and 5 cups of flour to the mixture until it forms a cohesive dough. Knead on a well-floured surface for 5 minutes, until the dough becomes smooth and elastic.

Next, lightly anoint a large bowl with oil, then place the dough inside and turn it to coat evenly. Cover the bowl with a damp cloth and let it rise in a warm environment until it has doubled in size, approximately 20 minutes.

Preheat the oven to 415 degrees F (215 degrees C).

Transfer the dough onto an oiled baking sheet, spreading it evenly to cover the entire surface. Use your fingertips to create small indentations all over the dough, spaced about 1 inch apart. Drizzle the focaccia with 3 tablespoons olive oil, then sprinkle rosemary, Parmesan cheese, and the remaining 1 tablespoon of kosher salt over the top.
