Mexican Turkey Casserole
Ingredients
  • 1 (16 ounce) package whole wheat rotini pasta
  • 2 tablespoons olive oil
  • 1 pound ground turkey
  • 2 tablespoons chili powder
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 1 (15 ounce) can yellow corn, drained
  • 1 (10 ounce) can diced tomatoes and green chiles, undrained
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 1 celery stalk, diced
  • 1 carrot, diced
  • 1 (15 ounce) can tomato sauce
  • 1 (8 ounce) package pepper Jack cheese, shredded
Instructions
1
Firstly, set the oven to a temperature of 350 degrees Fahrenheit (175 degrees Celsius) for preheating purposes.
2
Next, fill a large container with water and add a moderate amount of salt to it. Bring the mixture to a rolling boil, then cook the rotini pasta until it reaches an optimal level of tenderness without becoming mushy, approximately 10 minutes. Remove the pasta from the boiling water and drain it.
3
In a large pan, heat a substantial amount of olive oil over medium-high heat. Introduce ground turkey into the pan and use a wooden spoon to break it up into small pieces. Add a blend of spices, including chili powder, garlic, cumin, cayenne pepper, oregano, and black pepper. Mix the ingredients well to ensure a uniform flavor distribution.
4
Continue cooking and stirring the turkey mixture until it reaches a browned and crumbly consistency, taking around 5 to 7 minutes. Add corn, diced tomatoes, chiles, green bell pepper, onion, celery, and carrot to the pan. Mix everything together thoroughly.
5
Cover the pan with a lid and cook until the vegetables are tender, stirring occasionally to prevent burning. Allow the mixture to simmer for approximately 8 minutes.
6
Introduce tomato sauce into the pan and let it thicken, taking around 5 minutes. Transfer the turkey mixture to a 9x13-inch casserole dish and add the cooked pasta. Mix everything together until it forms a cohesive whole.
7
Top the casserole dish with pepper Jack cheese and bake in the preheated oven until the cheese is melted, approximately 10 minutes.
