Mexican-Style Stuffed Peppers
Ingredients
  • 1 pound ground beef
  • 1 (1 ounce) package taco seasoning mix
  • 3/4 cup water
  • 2 teaspoons chili powder
  • 1/2 cup cooked rice
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon ground black pepper
  • 2 (8 ounce) cans tomato sauce, divided
  • 3 large red bell peppers
  • 6 (1 inch) cubes Colby-Jack cheese

Heat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

Rub a 9x13-inch baking dish with butter or cooking spray to prevent sticking.

Cook the ground beef in a skillet over medium heat, breaking it apart into small pieces as it cooks. This should take around 8 minutes. Remove any excess fat from the skillet.

Mix in the taco seasoning, water, chili powder, cooked rice, salt, garlic salt, black pepper, and 1 can of tomato sauce. Combine everything thoroughly.

Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes.

Simultaneously, cut the bell peppers in half lengthwise and remove their stems, membranes, cores, and seeds.

Place a steamer basket into a large saucepan and fill it with water, leaving about an inch at the top.

Cover the pan and bring the water to a boil over high heat.

Place the peppers into the steamer basket and cover the pan again. Steam them until they're just tender, about 3 to 5 minutes.

Add the steamed peppers to the prepared baking dish and fill it lightly with the meat mixture.

Place a small cube of Colby-Jack cheese in the center of each pepper and spoon some of the remaining tomato sauce over them.

Bake in your preheated oven until both the peppers and filling are tender, taking about 25 to 30 minutes.
