- 1 pound dried pinto beans, rinsed
- 4 cups water, or as needed
- 2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
- 1/2 pound bacon, cut into 1/2-inch pieces
- 1 yellow onion, chopped
- 1 tablespoon chili powder, or to taste
- 1 tablespoon ground cumin, or to taste
- 1 1/2 teaspoons garlic powder, or to taste
- 1/2 bunch fresh cilantro, chopped
- salt to taste

Fill a large container with pinto beans and fill it with an adequate amount of water, allowing the beans to be submerged by two to three inches. Allow the beans to soak overnight.

Next, drain the soaked beans and return them to the container, then fill it with fresh water to cover the beans. Add diced tomatoes, crispy bacon, sautéed onion, a blend of spices including chili powder and cumin, as well as garlic powder to the pot. Bring the mixture to a rolling boil, then gradually decrease the heat to a low simmer for three hours. Periodically check on the beans and add more water if necessary to achieve the desired consistency.

Once the beans have reached a tender state, stir in chopped cilantro and a pinch of salt. Continue to simmer the beans for an additional hour, allowing them to reach their full potential of softness.
