Mexican-Style Egg Rolls
Ingredients
  • 2 tablespoons vegetable oil
  • 1 pound ground beef
  • 1 large onion, chopped
  • 5 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (1 ounce) package taco seasoning
  • 1 (8 ounce) jar taco sauce
  • 4 (16 ounce) packages egg roll wrappers
  • 1 (1 pound) loaf processed cheese food (i.e. Velveeta®), cut into 1/4 inch thick slices
  • 2 egg whites, lightly beaten
  • 2 quarts canola oil
Instructions
1
Begin by heating a generous amount of vegetable oil and ground beef in a large skillet over medium-high heat, stirring occasionally until the meat is uniformly browned and no longer pink. Gradually decrease the heat to a medium setting, then add sliced onions, minced garlic, and diced bell peppers to the skillet. Continue cooking until these vegetables are tender, approximately 5 minutes.
2
Next, incorporate a packet of taco seasoning and the corresponding amount of taco sauce into the skillet mixture. Continue to cook, stirring constantly, until the sauce starts to bubble and emit a gentle simmering motion, roughly 5 minutes.
3
Moving on to the egg roll assembly process, locate a clean and flat surface for preparing these delicate pastries. Place one egg roll wrapper with the corner facing you, then position 1 tablespoon of the meat mixture in the center of the wrapper. Add a slice of cheese on top of the filling, followed by folding the corner closest to you over the meat mixture. Roll the wrapper around the filling 1-1/2 times, tucking in the two opposite side corners as you proceed. To seal the final corner, moisten your fingers with egg whites and press them firmly onto the exposed area.
4
Repeat this process using a second egg roll wrapper, ensuring each pastry is sealed properly before proceeding. Allow the assembled egg rolls to rest briefly, allowing the egg white to dry and hold its shape.
5
If serving the egg rolls at a later time, preheat your oven to 325 degrees F (165 degrees C). Line a heat-proof dish with paper towels for easy cleanup.
6
To cook the egg rolls in a wok, pour a substantial amount of canola oil into the skillet over medium-high heat. Wait for the oil to begin shimmering, then carefully slide two to three egg rolls into the wok. Cook until the wrappers turn golden brown and emit a gentle bubbling motion, approximately 30 seconds to 1 minute. Use a slotted spoon or strainer to remove the cooked egg rolls from the wok, then place them in the prepared dish. If desired, put the dish in a preheated oven and bake for 15 minutes or lower the temperature to avoid overcooking.
