  • 1 medium avocado, peeled and pitted
  • 2 tablespoons lime juice
  • 4 slices pepper Jack cheese
  • 1 tablespoon vegetable oil
  • 4 eggs
  • 1/4 cup salsa
  • salt and freshly ground black pepper to taste

Mash together black beans, avocado, and a squeeze of fresh lime juice in a bowl. Mix the ingredients gently to create a harmonious blend. Divide this mixture among the tostada shells, filling each one generously. Place a slice of cheese atop each tostada shell.

Heat a moderate amount of oil in a small skillet over high heat. Carefully pour an egg into the hot oil. Cook for 2 minutes, or until the whites are set. Flip the egg over and continue cooking for an additional 2 minutes, or until the yolks are cooked to your desired doneness.
