Ingredients
- 1 teaspoon olive oil
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 tablespoons all-purpose flour, or as needed
- 1 (1 ounce) packet taco seasoning mix
- 1 pound skinless, boneless chicken breast halves - cut into bite size pieces
- 2 teaspoons olive oil
- 1 (15 ounce) can black beans, rinsed and drained
- 1/2 cup prepared salsa
- 1 cup shredded Cheddar cheese
Instructions
1
Preheat a skillet over medium-high heat, allowing the oil to reach its boiling point. Introduce the green and red bell pepper into the skillet, stirring constantly as they begin to soften after approximately 5 minutes. Remove the peppers from the skillet and set them aside.
2
In a separate bowl, combine flour and taco seasoning. Gradually add chicken pieces to the mixture, ensuring each piece is evenly coated before adding the next. Reheat a skillet over medium-high heat and introduce 2 teaspoons of olive oil, stirring the chicken as it cooks until it reaches a fully cooked state and the coating is golden brown, approximately 5 minutes. Combine the chicken with the previously set aside bell peppers, black beans, and salsa in the skillet. Allow the mixture to simmer for about 5 minutes, permitting the flavors to meld together.
3
Serve each portion hot by sprinkling shredded Cheddar cheese on top.
