- 1 (14 ounce) can black beans, rinsed and drained
- 3/4 cup shredded Mexican cheese blend
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 Roma tomatoes, chopped
- 1 avocado, diced, or more to taste
- 1 (4 ounce) can sliced black olives

Begin by preheating the oven to a high temperature of 375 degrees Fahrenheit. Prepare a baking pan by lining it with aluminum foil, making the process easier to clean up afterwards.

Next, cut the squash in half lengthwise and carefully remove the seeds. Using a brush, apply a small amount of olive oil to each half, spreading it evenly across the surface. Add a pinch of salt and pepper for added flavor.

Place the squash halves cut-side down on the prepared baking pan, allowing them to cook evenly in the oven.

After 30 minutes of cooking, remove the squash from the oven and reduce the temperature to a moderate level of 350 degrees Fahrenheit. Prepare a casserole dish by spraying it with non-stick cooking spray, ensuring the mixture will release easily.

Using a fork or spoon, carefully remove the cooked squash strands from their skins and place them in a large bowl. Discard the remaining squash skins.
