Mexican Pulled Pork Casserole
Ingredients
  • 10 (8 inch) corn tortillas
  • 3 cups cooked pulled pork
  • 4 tablespoons canned black beans, rinsed
  • 1/2 (8 ounce) package cream cheese, cut into cubes
  • 2 tablespoons chopped fresh cilantro, or more to taste
  • 1 1/2 cups salsa, or more to taste
  • 6 tablespoons leftover cooked rice
  • 8 tablespoons shredded Mexican cheese blend
Instructions
1
Preheat your oven to a hot temperature of 350 degrees Fahrenheit or 175 degrees Celsius.
2
Take a casserole dish and cover the bottom with six corn tortillas, ensuring they completely cover the surface and sides.
3
Add half of the pulled pork, half of the black beans, half of the cream cheese, half of the chopped cilantro, one-half cup of salsa, one-third cup of cooked rice, and three tablespoons of Mexican cheese blend.
4
Cover the dish with four corn tortillas. Then repeat the layering process, finishing with the remaining Mexican cheese blend on top.
5
Place the casserole dish in the preheated oven and bake until the cheese is melted and bubbly, taking around 25 minutes.
6
Once done, remove the dish from the oven and let it cool before serving.
