Ingredients
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg, beaten
- 2 cups shredded Mexican cheese blend, divided
- 1 (16 ounce) can refried beans
- 1/2 cup mayonnaise
- 1/4 cup blue cheese salad dressing
- 1 (15 ounce) can turkey chili without beans
- 2 cups shredded iceberg lettuce
- 1 (10 ounce) can diced tomatoes with green chile peppers, drained
Instructions
1
Preheat your oven to 400 degrees Fahrenheit, or 200 degrees Celsius. In a medium-sized bowl, combine the flour, cornmeal, sugar and baking powder. Gradually add in the milk, oil and eggs until you achieve a just moist consistency.
2
Pour the mixture into a greased 12 inch deep-dish pizza pan, or a 10x15 inch baking dish.
3
Bake the crust in the preheated oven for 10 minutes, then remove it and sprinkle with 1 cup of cheese.
4
Replace the crust in the oven for an additional 10 minutes, allowing the cheese to melt and become bubbly.
5
Spread a layer of refried beans and mayonnaise over the melted cheese, followed by a dollop of blue cheese dressing.
6
Top this mixture with turkey chili and the remaining cheese, creating a layered effect.
7
Return the dish to the oven for 12 to 15 minutes, or until it reaches your desired level of doneness.
8
Just before serving, add a handful of lettuce and diced tomatoes on top.
9
Slice the dish into individual portions, ready to be enjoyed.
