Mexican Pita Wraps

  • 1/2 cup vegetarian refried beans
  • 1/4 avocado - peeled, pitted and diced
  • 2 tablespoons fresh salsa, or to taste
  • 2 tablespoons crumbled feta cheese, divided
  • 2 teaspoons chopped fresh cilantro, or to taste
  • hot sauce to taste

Preheat your oven to 375 degrees Fahrenheit for a few minutes; place the pita bread inside and warm it until it emits a pleasant aroma, approximately 1 to 2 minutes; carefully cut the pita in half and open it up completely.

Heat the black beans in a small saucepan over medium heat until they reach a hot temperature; stir in some diced avocado to add creaminess. Divide the bean mixture into two equal parts; fill each half of the pita with the bean mixture and top it off with a spoonful of salsa, crumbled feta cheese, chopped cilantro, and a few dashes of hot sauce.
