Mexican Molasses Cookies
Ingredients
  • 1 1/4 cups packed brown sugar
  • 1/4 cup shortening
  • 1 egg
  • 1/4 cup milk
  • 1 1/2 teaspoons vanilla extract
  • 1 cup unsulfured molasses
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 6 cups all-purpose flour
  • 1 egg, beaten
Instructions
1
Preheat the oven's temperature setting to 350 degrees Fahrenheit (175 degrees Celsius). Cover your baking sheets with a layer of parchment paper for easy cleanup.
2
Combine the brown sugar and shortening in a large mixing container using an electric mixer until you achieve a smooth consistency. Introduce the egg, milk, and vanilla into the mixture, blending until it's also smooth. Incorporate molasses, baking soda, and cinnamon into the mixture as well. Gradually add flour until the dough reaches a suitable consistency for rolling out.
3
Unfold the dough on a lightly dusted surface to a thickness of 1/4 inch. Utilize a pig-shaped cookie cutter to cut out cookies, leaving about 2 inches of space between each one on the prepared baking sheets. Brush the tops of the cookies with a beaten egg for added flavor.
4
Place the cut-out cookies in the preheated oven and bake until they're puffed up and the edges are lightly browned, taking around 15 to 17 minutes. Remove the cookies from the oven and let them cool for a short while on the baking sheets; serve warm or transfer them to a wire rack to cool completely.
