- 1 1/2 pounds ground turkey
- 1 bunch green onions, chopped
- 1 (1.25 ounce) package taco seasoning mix
- 2 cups water
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (4 ounce) can diced green chile peppers, undrained
- 1 (15 ounce) container ricotta cheese
- 2 eggs
- 8 (10 inch) flour tortillas
- 1 (8 ounce) container sour cream
- 1/4 cup salsa

Heat your oven to 400 degrees Fahrenheit, or 200 degrees Celsius. Place the ground turkey in a substantial, deep skillet and cook over high heat until it's uniformly browned. Stir in chopped green onions, a packet of taco seasoning blend, water, diced tomatoes with their juice, and roasted green chiles with their juice. Lower the heat to a medium level.

In a separate, medium-sized container, combine ricotta cheese and eggs. Place two tortillas side by side in the bottom of a 9x13 inch baking dish. Spread one-quarter of the ricotta mixture onto the tortillas. Spoon one-quarter of the meat mixture over the cheese. Continue adding layers until all ingredients have been used up.

Bake in your preheated oven for 20 minutes, or until the sauce is bubbly. In a small bowl, combine sour cream and salsa. Serve the dish in a separate bowl on the side.
