Ingredients
- 1 1/2 pounds ground beef
- 1/4 cup water
- 1 (1 ounce) packet taco seasoning mix
- 12 (8 inch) flour tortillas, or more if needed
- 1 (14 ounce) can refried beans
- 3 cups shredded Colby-Jack cheese
- 1 (8 ounce) jar taco sauce
- 1 cup shredded Colby-Jack cheese
Instructions
1
Preheat your oven to a temperature of 350 degrees Fahrenheit (175 degrees Celsius).
2
To prepare the dish, grease a 9x13-inch casserole pan with cooking spray.
3
Heat a large skillet over high heat and add ground beef, stirring constantly until it reaches the desired consistency. This should take around 10 minutes. Remove any excess fat from the skillet and add water, along with taco seasoning. Continue cooking until the mixture thickens, taking about 5 to 10 minutes.
4
Place three tortillas at the bottom of the casserole pan, followed by half a can of refried beans and half the ground beef. Sprinkle 1 cup Colby-Jack cheese over the top of the ground beef layer. Add three more tortillas on top, followed by half a can of refried beans and half the jar of taco sauce. Sprinkle 1 cup Colby-Jack cheese over this layer, and then add three more tortillas on top. Cover the dish with the remaining ground beef and 1 cup Colby-Jack cheese.
5
Bake in a preheated oven for 20 to 25 minutes, or until the top tortilla layer starts to brown.
6
Sprinkle an additional 1 cup Colby-Jack cheese over the top of the lasagna.
7
Turn on your oven's broiler and place the lasagna under it, cooking until the cheese is melted and bubbly. This should take 3 to 5 minutes.
