  • 3/4 cup pinole (coarse ground maize flour)
  • 1 pinch crushed piloncillo (Mexican brown sugar cone), or more to taste

Begin by placing the water, cinnamon stick, clove, and star anise in a saucepan over medium heat. As the mixture comes to a boil, carefully remove it from the heat source and let the spices infuse into the water for approximately 10 minutes, allowing the liquid to become fragrant. Next, strain the mixture to separate the solids from the liquid.

In a separate saucepan, combine milk, chocolate, and pinole over medium heat. Whisk the mixture constantly until the chocolate has fully dissolved and the liquid has thickened to your liking, taking around 10 minutes. Remove the saucepan from the heat source and let it rest for a few more minutes, allowing the piloncillo to dissolve into the mixture. This should take approximately 5 additional minutes.
