- 1 small zucchini, cut into 1/2-inch slices
- 1 onion, cut into wedges and separated
- 1 red bell pepper, cut into 1 inch pieces
- 10 cherry tomatoes

Combine olive oil, cumin, chopped cilantro, and lime juice in a shallow dish. Add salt and pepper to taste. Mix the ingredients until they are well combined. Then, add chicken to the mixture and stir it in thoroughly. Cover the dish with a lid or plastic wrap, and refrigerate for at least one hour.

Next, prepare the grill by heating it to high heat. Thread chicken, zucchini, onion, red bell pepper, and tomatoes onto skewers in a way that allows for even cooking.

Before placing the skewers on the grill, brush them with oil to prevent sticking. Arrange the skewers on the hot grill grate in a single layer, making sure they are not overlapping.
