Ingredients
- 2 pounds ground beef
- 1 onion, chopped
- 2 teaspoons minced garlic
- 1 (2 ounce) can black olives, sliced
- 1 (4 ounce) can diced green chili peppers
- 1 (10 ounce) can diced tomatoes with green chile peppers
- 1 (16 ounce) jar taco sauce
- 2 (16 ounce) cans refried beans
- 12 (8 inch) flour tortillas
- 9 ounces shredded Colby cheese

Preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit or 175 degrees Celsius.

In a large cooking vessel heated over medium heat, cook the ground beef for 5 minutes. Introduce the onion and garlic into the mixture and continue to cook for an additional 5 minutes. If necessary, remove any excess fat from the mixture. Combine the olives, green chile peppers, tomatoes with green chile peppers, taco sauce and refried beans into the mixture. Stir everything together thoroughly and then lower the heat to its lowest setting, allowing the mixture to simmer for 15 to 20 minutes.

Place a thin layer of the meat mixture at the bottom of a large casserole dish that holds 4 quarts. Cover this layer with a thin layer of tortillas, followed by another layer of the meat mixture, then a layer of cheese. Continue to add layers of tortillas, meat mixture and cheese until all the tortillas have been used. Finish with a layer of meat mixture and cheese on top.

Bake the dish in the preheated oven for 20 to 30 minutes, or until the cheese is slightly browned and bubbly.
